PALEO BANANA BREAD

It’s safe to say that after seeing the last post you can only imagine how I ate during the month of December!
I pretty much flipping from “eating clean” 
to “give me diabetes” 
 So…like 50 million other people…I started eating clean again when we rang in the New Year.
Of course I still like to indulge every now and again…
{usually around 9 PM EVERY NIGHT}
and I am pretty good at resisting the urge to dive into the freezer and stuff my face full of chocolate chips…but when there are ripe bananas on my counter the little person in my head screams CHOCOLATE CHIP BANANA CAKE WITH FROSTING!!
{you can tell my self control is amazing}
SO…after eating clean for ummm 2 days…I eagerly started searching the web for the most delicious, moist, high calorie banana bread possible…
when I pulled up Pinterest to search there I found beautiful fit women staring back at me from my friends recent pins…
AND immediately my search changed to finding PALEO banana bread recipes!
I found the PERFECT one…
it was easy and I had all the ingredients already!

{of course I substituted a few of them}

Ingredients:
1 serving cooking spray
2 cups almond flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
2 eggs
1/2 cup water
1 teaspoon almond extract
1/4 cup agave syrup
2 ripe bananas, mashed
1/2 teaspoon vanilla bean paste (optional)
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Spray loaf pan with cooking spray.
2. Mix together almond flour, ground cinnamon, and baking soda in a bowl.
3. Beat two eggs in a bowl. Mix in water, almond extract, agave syrup, mashed bananas, and vanilla bean paste. Add banana mixture to almond flour mixture; mix until no dry areas are visible. Pour batter into the prepared loaf pan.
4. Bake banana bread in the preheated oven until brown and crisp around the edges, about 45 minutes.

 I substituted the agave syrup with HONEY and the vanilla paste with my vanilla flavoring…which kinda makes it not really PALEO but you get the idea!
 It turned out DELICIOUS!
Totally hit the spot and curved any sweet craving I had!
Reagan and Jeff LOVED IT!
 I will DEFINITELY be making this recipe again!!
